Friday's Feast!

I saw on another blog where people share their favorite recipes! So I would like to start sharing and maybe some of my other blogging buddies would do the same! I got this recipe from my church cookbook! I love church cookbooks because you know that the recipes are great and that they are usually very easy to make! This one comes from Daphne Burdette.

Hash brown Casserole

2(16 oz) bags of frozen hash browns
1/4 cup of onion, finely chopped
1 can of cream of celery soup
1 can of cream of chicken soup
1 lb. bacon, fried and crumbled
1 pint of sour cream
2 cups of shredded cheddar cheese
2 cups of cornflakes, finely crushed
2 tablespoons of melted butter

Thaw hash browns. Fry bacon. Saute onion in bacon drippings. Mix hash browns, onion celery and chicken soups, bacon, sour cream, and cheese together and put into large casserole dish sprayed with nonstick cooking spray. Top with crushed cornflakes and melted butter. Bake at 350 for about 1 hour and 15 minutes, or until bubbly.

I love this recipe! We usually skip to onion part because or family is not too big on onions. Really easy to make, just mix together. Sometimes to speed up the process I buy that already cooked bacon, that you just heat up in the microwave. Also some people like to use Ritz crackers on top. Makes a whole bunch! Great to take to Sunday school or to eat all week long!

Carpenter's Birth Story

I love hearing birth stories! Each one is uniquely special. Carpenter's 3rd birthday is coming up soon, so I thought I wanted to share his story!

The morning of September 15th, I went by myself to have an ultrasound done to monitor Carpenter's growth. The nurse and doctors said they wanted to send me to Greenville Memorial to have him more closely monitored by some OBGYN specialist. I don't think I understood how serious the situation was until the nurse asked me where my husband was and if he could meet me at the hospital. Carpenter did not do well in his ultrasound scores, he wasn't mimicking breathing, and not very active at all. I called Jon to meet me at the hospital.

So I met my husband by the elevators, by accident. I was close to the hospital but I drove slowly so I wouldn't panic. Jon must have flew from Fountain Inn. He was working on framing a house and was there in no time.

We got admitted at the OBGYN department and were off to see the specialist. Dr. Maybe(sp?) the OBGYN specialist came in to see us. We really could not find out what was wrong with Carpenter. So they sent me back to my room and called my regular OBGYN. They decided it would be better to deliver Carpenter now, at 5 weeks early, because he was not growing in my belly well. But when they hooked me back up to all the monitors I was having contractions. I didn't even know it yet! I guess Carpenter was ready to meet the world on his own. I was in denial by this time. I just came in for an ultrasound. I made fun of my in-laws and parents heading to the hospital. I wasn't going to have a baby today!?!

Carpenter was born on September 16, at 12:16 am. He was beautiful! But everyone thinks their baby is. He weighed 4 lbs and 8 oz and 17 1/4 inches long. He was tiny!

Everything was going really well! Except he did not want to breast feed. So we were trying the cup feeding method and it did not really go well! All of the family members were coming there to visit us and hold Carpenter.

Dr. Darby, the pediatric hospital doc for CMC, came and looked at Carpenter, and said everything looked great! Later we met him in the hall and he said that he wanted to meet with us again. We really did not know what this was about. We thought it was about when he was going to schedule his circumcision. Our hospital room was full of family members and nurses when he came in. Dr. Darby told us that he thought Carpenter might have down syndrome. And showed us the characteristics that led him to believe this. The only thing I would have changed about finding out is that is just wasn't just Jon and I in the room with Darby. The instant the words came out I felt crowded, wanted it to be only Jon and I, and to get Carpenter into the room as fast as possible. Darby took Carpenter to have his blood drawn for testing for down syndrome(T-21). Honestly, we shuffled everyone out of the room. And Jon and I had a moment together that I never would forget. We cried and analyzed our situation. We did alot of praying. It took 2 hours for Carpenter to return to our room. It felt like forever! I just wanted my baby! To hold him!

Carpenter ended up going to the NICU for not eating well! It was weird not having him in my room. I heard the baby cry in the room next door and I wanted my baby. My heart ached! But at least my baby was here! Carpenter was being taken care of my wonderful nurses and doctors. He stayed in the NICU for 24 days. He really was in no danger. It just took him a while to learn how to suck on the bottle. There were a lot more babies in he NICU with life threatening situations. But I recently thought of our time in the NICU. I wasn't worried whether he was going to live or die. We had a goal to accomplish: get him to suck the bottle and finish it on his own every 3 hours. I would drop Marley off at school and go straight to the hospital. I tried to make every feeding. I wanted to be there to help him along. But while he was in the incubator it gave me time to read and learn everything I could about down syndrome. I think back and think maybe it was good that he was in the NICU. It gave me time to bond with my baby and to do research without being at home and being distracted about the house.

The first night home without Carpenter was an odd experience. I never imagined not bringing my baby home from the hospital. Some nights I would hear him cry. But after the first night it got easier to leave him with loving nurses. And I could call anytime I wanted, to check on how he was.

I want to say a special thank you to Carpenter's grandparents. Meme, PaPa, Gran, and Pop-Pop all took time out of their days to go visit him in the NICU or watch Marley. They brought us supper and helped straighten up our house. Our church, was so wonderful with construction help, food, gifts, and diapers. I have never felt soo loved! Thank you Kelly and Andy for coming to the hospital a bunch and bringing us supper! You are a great best friend. Thank you to everyone who watched Marley for me, I hated to leave her because I felt like I wasn't able to spend as much time as I wanted to with her. But I knew Carpenter had goals to accomplish. And the faster we got them done the faster we were home together as a family.

The diagnosis of down syndrome is not Carpenter. It is just a part of who he is. Not all that he can be. Finding out about Carpenter having down syndrome was a shock. I feel that any parent would handle the situation the same way. You would love your son with all of your heart no matter what. You would work on his goals to help him accomplish everything. Yes, it may take longer, but the joy of his first steps were amazingly more special than I could have imagined. His first smile, when he finally said Mama, just took my breath away. Carpenter is just such an adorable little boy, who I am happy to be his mother. God has certainly blessed our family!




Funny note: Marley thought when Sadie was born that all babies stayed at the hospital for a while after birth!

TV Shows/ Baby Name Suggestions!

Baby TV Shows~ How did I get trapped into watching them? "Birth Day, Runway Mom, Special Delivery" are some of the shows! I think there should be a way I can block these from my TV. It makes me worry about my delivery, and I want to stop watching but you are sucked in and want to make sure everything turns out okay! Did anyone else watch these shows? I am making a promise to myself not to watch them anymore! Makes me nervous!

Does anyone out there have any baby name suggestions? We do not know what the sex of the baby is, so we need both boy and girl names! Jon and I like a lot of names but can't really settle on any. We like unique and biblical based. But bibilically based girl names are hard because it is like Mary, and not unique enough for us. Can't wait to read suggestions! Thanks everyone!

New Beginnings!

We have had a pretty busy week at the Long household! Here is what has happened!

On Friday the 17th: Marley had meet the teacher night at school! She was soo excited! At meet the teacher night we met Milli and took her with us to Meme and Papa's house for "the Last Supper" with Taylor! The girls had fun riding the horses bareback. Carpenter is in "love!" Really he is! I have never seen him like this! He will not let go of Milli, holding her hand, hugging her, laying his head on her shoulder. I did not know that it started this early in boys! Then we went back to our house for Marley and Milli to have their High School Musical 2 party. The girls watched the movie and ate popcorn and candy. Carpenter would not stay in his bed because he knew Milli was at our house! It took me forever to get him to fall asleep!

On Saturday the 18th: Carpenter wakes us up bright and early! Then the girls get up and want to start on their crafts at 7:30am! We feed everyone! While we are doing this my mom, dad, and sis are headed off to Clemson for move in day! She was soo excited. My parents said it was chaotic! Everyone was worn out by having to go up so many flights of stairs! But Taylor got all moved in! I just hate I couldn't be there. Marley and Milli had a dance performance at the mall. So by noon, we take Marley, Milli, and our double stroller with Carpenter and Sadie in it. Mall on a Saturday!?! So we met Gran and Pop-Pop at the mall food place to get the babies fed so we would be ready to see Marley perform at 1:15. So everyone is fed and we head to the Center Stage and it looks like the girls had already performed and it is 12:45. One of the personalities in costume was about to pass out so the girls had to go on real early! We all missed it! Our family was there with video camera and digital camera charged and we missed it! We were so upset!

On Sunday the 19th: Church all day! Sunday school, preaching. Gran's for lunch! Nap time! Then Jon and I take Marley, Carpenter, and Sadie to Meme and Papa's so we can go to a class at church. We really have loved these series of classes on Successful Families! We have learned a lot!

On Monday the 20th: Marley's first day of school! So I get Marley dressed and moving to go for her first day in 2nd grade! Can you believe it, I am the mom of a 2nd grader. Jon watches Carpenter and Sadie while I walk Marley into school. I can't believe how old she is getting. The I make a mad rush home to get Carpenter and Sadie! Carpenter also is having his first day of school! He has to be there by 9! We meet his new teacher! And his new classmates. There were some children crying because this is the first time away from mom. But then there was Sadie, shaking the baby gate and crying because she wanted back in to play! Poor Sadie was in the car all morning!

On Tuesday the 21st: Carpenter had an OT evaluation at 8am in Downtown Greenville! We did not get out until 9:45. The we all headed to Carpenter's school! And just stayed in Greenville because we had to pick Carpenter up after lunch! So Sadie and I had another wonderful day in the car!

On Wednesday the 22nd: Taylor's first day of classes at Clemson! What does she do on her first day? She gets locked out of her dorm! Blondie!

On Thursday the 23rd: Everyone wakes up early. The two parents are forced to wake up early! I take the babies to visit Gran at work real quick before heading to Walmart. It is soo hard to shop when you have one in the seat and one in the cart. Poor Sadie gets crammed in the back with all of the groceries until there is no room left!

This is where we are right now in our week! I will post some slide shows later when the kids are asleep!

1. smoothie, I am dying for one right now but can't have because of the G.Diabetes!
2. house steak from Arizona's Steakhouse, delicious!
3. asiago cheese bagels from Panera, I haven't had these in a while because it is too hard to get the kids out of the car and go in and because of G.D.
4. salads, I just love salads from anywhere!!!!! I love Greek Salads or a house salad with Blue Cheese dressing!

I would rather be:
1. on a date with my husband to Charlie's Steakhouse
2. at a Nickel Creek concert
3. outside at Falls Park with my family
4. being able to sleep through the night then sleep in one morning and not having to worry about feeding anybody or getting anyone dressed

Favorite movies:
1. The Notebook, I can also read the book over and over again! I love it!
2. Band of Brothers, I love military stuff!
3. Anne of Green Gables series, I don't know why but I like it~
4. Seven Brides for Seven Brothers or Oklahoma, My mom started me on musicals when I was really young! I think that is all she let me watch!

Gestational Diabetes! and family stuff!

Everything seems to be going well with my G.D. I am on a strict diet and have to eat 6 times a day. I also have to test my blood 4 times a day! This is really not too bad! Just as long as I don't have to give myself shots! I mean I would if I had to, but don't want to! But I will have to check my blood sugar levels 2-3 weeks after delivery also. The hardest part for me is eating six times a day! I just have no desire to eat, but I am! I couldn't sleep for like 2 nights after I was told about my G.D. I was worried that I would have this huge baby! And that I wouldn't be able to have it, and would have to have a C-Section!

Update on Family:
Marley has started back at dance! She loves being with her friends and dancing with Mrs. Erica! Marley wants me to tell everybody that her Gran and Pop-Pop got her a Webkinz! She loves the stuffed animal and playing the games on the computer. She hasn't been home much this week due to her social calender. She is spending the last few days before school starts with her friends.

Carpenter loves to sing. I will have to post a video of it! He also loves going outside, but it has been extremely hot! We have been going out early in the morning! Which is no problem because he wakes up sooo early! Carpenter has cried every time Marley has left with her friends! He misses his big sissy! Carpenter had his hair cut! It needed it badly! As soon as Jon got a little money, I spent it on a hair cut! You have to take boys all of the time!

Sadie is just plain funny. She was climbing all over the couch, and getting in trouble. I finally had had enough and asked her if she wanted a spanking. And she said "Yeah, Yeah!" Like a spanking would be a good idea! She just doesn't care if we spank her! We are definitely having to watch what we say around her, she is repeating everything! Sadie needs a hair cut but I am not ready yet. Yes, she is starting to get a mullet! But if I get it trimmed that means she is growing up! I will get it done! I feel sorry for the hair stylist that has to make her stay still!

Jonathan sold his first house with partners Lee(brother) and Tim. I just wanted to show you all pics of it!

What has been going on in our lives?

We'll last week July 23 - 27 Marley went to arts camp at Simpsonville First with her best friend Milli. They had a wonderful time and had a great performance on Sunday.

Pop-Pop had a great time on the mission trip and everyone had a safe wonderful time! Our church may be going back up there in a few weeks!

My mom, dad, and sister made it home safely and also had a great trip! Taylor did really well! I will have to get some pics from mom to post of my awesome sister! Now Taylor is all about Clemson! She can't wait to move in! Jon can't wait to go help her move in!

Last week, I started having contractions again. So Jon and I had to go to the hospital. Everything worked out fine, they gave me a shot of something though that I really hated. It mad me feel really jumpy and I couldn't control my movements! Jon just laughed at me. Poor Gran had to watch all of the kids by herself and watch Rocky and Gracie (Lee and Amy's baby doggies)! When we came to pick the babies up, both Carpenter and Sadie were asleep in Gran's lap in the rocking chair! Thank you so much Gran, we are truly blessed with family nearby! I know she had to be exhausted!

I found out that I have Gestational Diabetes! I am completely shocked! I really don't eat that much! I am going to a class tomorrow where I am going to learn how to check my blood sugar everyday! Hopefully I will be able to control it through diet and exercise! But this does explain how unbelievably tired I am. I have fears of having a huge baby and not being able to deliver it(I say "it" because we don't know the sex of the baby!)!

So this was our big news! Hope to post some pics soon! Sorry it is kind of difficult to take picks with two little ones' running everywhere!
